Tasteful winter soup with seasonal vegetables

Inspiration from "The Living Kitchen" at the Suikido Natural Healing Autumn Retreat 2022 — a warming nourishing soup for the stomach and liver.

A visit at Marken's amazing vegetable stand together with a walk in the garden, harvesting fresh herbs and we were able to prepare this tasty winter soup in our plant-based kitchen — to the delight of the students at the autumn Suikido Natural Healing Retreat, October 2022.

INGREDIENTS

  • Red lenses

  • Hokkaido

  • Yellow pumpkin

  • Parsnip

  • Potatoes

  • Onion

  • Fresh turmeric

  • Fresh ginger

  • Fresh lemongrass

  • Yellow chili

  • Curry

  • Cilantro

  • Salt and pepper

HOW TO DO

Cook all ingredients together in a pan with the appropriate amount of water - depending on how thin or thick you want the soup. When prepared, blend it all together.

On top, fresh herbs, roasted black sesame seeds and roasted chanterelles from the forest.
